Game
Game birds consist of duck, grouse, guinea fowl, partridge, quail and wood pigeon. Venison, hare, rabbit and (some say) lamb also come under the heading.

Most gamebirds and venison come into season in the autumn. When cooking, think strong flavours ā€” garlic, lemon or orange zest, sharp red fruits such as redcurrant, black olives, watercress, juniper, prunes ā€” and strong drink (either to cook with, or drink): port, brandy, gin. Serve with iron-rich side dishes such as bacon, cabbage, red cabbage and/or lentils.
